I made this cake for the Nisha’s 4th birthday on March 11, 2006. She is the daughter of Blake’s colleague, Poorti, and her husband Michael.

Design The only clue that I was given for the design was ‘ The Sea’. So, I took it literally and this is what I came up with.

Cake Famous “Chocolate Blackout Cake” by Margaret Braun.

Filling Chocolate mousse.

Icing Vanilla Italian meringue buttercream.

Decoration This cake was so much fun to make!!! If you notice, the cake shows a cut through the ocean from the sandy, coral reef bottom to the waves on top. I took the opportunity with this cake to further explore and practice chocolate coloring and molding, so all the sea creatures are made from colored white and dark chocolate including the orca whale, dolphins, sharks, fish, sea horses, shells, starfish, and lobsters. The seaweed was made by wrapping colored gumpaste around a wooden dowel and allowing it to dry for several days. The waves on the sides of the blue buttercream ocean were made using a zig-zag serrated spatula. The waves on top were made using blue and white ing that wasn’t completely mixed together and piped in a swirl pattern. The ‘sand’ was made using a combination of graham cracker crumbs and sugar.
