These are some test cakes I did for Candice & Dave's wedding coming up in June 2002. I had found a delicious sounding recipe for tiramisu wedding cake and just had to try it, especially since they are serving Italian food at the reception. The tiramisu cake is made with a dense white cake with either marsala cream cheese or kahlua buttercream icing. The cake filling is made with a kahlua and espresso soaking syrup brushed onto the cake, a layer of icing, and then a layer of ground Belgian bittersweet chocolate. Each cake has a slight variation in fillings and frostings. They both liked the marsala cream cheese icing the best, and even Dave liked the light coffee flavor even though he detests coffee (like me).
