This is the cake I made for my sister, Denise's, 25th birthday on July 14th, 2001.  This was a fun cake to make and my first 3-tier cake to boot.  The top and bottom tiers are red velvet cake while the middle tier is just a simple white cake.  The filling is coconut cream.  The cake is iced with classic buttercream and royal icing flowers.  I just wanted to get crazy and have fun with this cake.
